Vinification method: the grapes are de-stemmed, soft pressed and subsequently fermented in stainless steel vats at a controlled temperature with the addition of selected yeasts. The maceration lasts 16 days. Ageing method: ageing takes place in 5 hl French oak barrels for 18 months, then in wooden barrels of 30/50 hl, followed by at least 6 months of bottle ageing.
Pairing: Vino Nobile is a hefty wine which is best appreciated with red meat, grills, stews and game. Excellent with Pienza pecorino cheese and all ripe cheeses, it also goes well with vegetarian dishes including eggplant or radicchio. It is perfect with fillet steak with mushrooms. Serving: the bottle should be opened a couple of hours before drinking. To be served at a temperature between 16 and 18°. Vino Nobile is best enjoyed in the tulip glass.
